Polenta used to be one of those dishes, like risotto, that I didn’t love making because of all the attention it required. I’m not a big fan of standing over a pot for the duration of the cooking time. Then I tried a recipe making Polenta in the slow cooker and my life changed. This creamy, Slow Cooker Parmesan Polenta was born and life wouldn’t be the same without it.
Polenta is really very simple to make, but can taste bland when not seasoned well. Just a little tip, you don’t need to buy something specifically called “Polenta” at the store, regular ground cornmeal is all you need. Who knew?
Slow Cooker Parmesan Polenta is SO easy and delicious. I first read about the idea in America’s Test Kitchen’s book on slow cooker recipes. They call for milk in their polenta, but I made mine with water and it turned out really well. Creamy and satisfying. I do recommend adding the little bit of garlic butter, salt, and Parmesan cheese, though. It helps add flavor. You could add more herbs too, like a sprig of thyme or rosemary.
